Bring some Mediterranean flavours into your home
The good weather is finally starting to find its way to us as well. And because a summery feeling in the air always makes us feel like having light, tasty food, we’ve put together a delicious recipe for you which comes principally from the region of Italy.
 
Cima di rapa, also known as broccoli rabe or turnip top, is a typical Mediterranean vegetable and a close relative of the turnip. It is predominantly grown in the provinces of Campania and Apulia in southern Italy.
If cima di rapa is not available in your local grocery story, you can use broccoli instead.
 
Risotto alle cime di rapa
 
Ingredients
(serves 4)
- 500 g of cima di rapa   - Approx. 1 litre of vegetable stock, hot
- Salt   - 1 tablespoon of extra virgin olive oil
- Pepper (freshly ground)   - 1-2 shallots, finely chopped
- Butter (for sautéing)      - 1 garlic clove, crushed
- 100 ml white wine       - 300g risotto rice, e.g. Vialone
- 75 g mascarpone        - 50 g parmesan, freshly grated

Method
1   Prepare the cima di rapa, wash it and cook only the tender leaves and young florets in boiling salt water or steam until they are soft. Keep some of these lovely leaves and florets warm on the side, puree the rest and put them aside.
2   Melt the butter; add the shallots and garlic and sauté. Add the rice and steam it until it takes on a translucent appearance. Add the wine or 100ml of vegetable stock and bring to the boil. Slowly add the stock so that the rice is always just covered with liquid. Simmer the risotto for about 20 minutes, stirring constantly.
3   Add the pureed cima di rapa, mascarpone and some parmesan, season to taste.
4   Serve the risotto in pre-warmed plates. Shortly before serving, toss in the warmed cima di rapa that you kept aside earlier.
